Oyster Mushroom Pilaf

Rice-a-Roni, eat your heart out!

  • 1/2 C. Butter
  • 1 C. Angel Hair pasta, crushed
  • 2 C. diced oyster mushrooms
  • 2 C. long grain white Rice
  • 32 Oz. (1 qt) chicken broth
  • 1 tsp. salt
  • 1/4 tsp. pepper
  1. In a large lidded skillet, melt butter and brown vermicelli in open skillet on medium-high heat until light brown.
  2. Add mushrooms and continue stirring until mushrooms are sauteed and vermicelli is golden brown.
  3. Stir in rice, then chicken broth, salt, pepper and parsley.
  4. Bring to a boil then cover with lid and turn down heat to lowest setting. Simmer 20 minutes (Do NOT lift lid during cooking no matter how tempted you are!).
  5. Fluff with fork just before serving.
