Fried Porcini Slices

In the Italian style, get out of the way of the ingredients.

  • 1 lb. #1 Porcini buttons
  • Fruity extra-virgin olive oil
  • Finely ground fresh black pepper (or cayenne)
  • Thin shavings of Grana Padano
  • Fresh lemon juice
  1. Slice the buttons 1/4" thick vertically.
  2. Saute each side on medium high heat with your fruitiest olive oil and a hint of pepper for 90 seconds.
  3. Serve with a thin 3" x 1/2" curl of Grana Padano and a couple drops of fresh lemon juice.
Additional Tips

This is all about the subtle balance of flavors. Nutty meaty mushroom, salty bite of cheese, sharp lemon, fruity grassy oil, and a tiny kick of pepper. Adjust as needed for size and age of mushroom, age and type of cheese, drops of lemon, etc.
