Cheese & Apple Polenta with Black Truffle

At a glance
  • 3 C. water
  • 1 C. milk
  • 1 bay leaf
  • 1 t. salt
  • 1/4 t. pepper
  • 1 C. polenta
  • 2 T. butter, cut into pieces
  • 1 C. sharp white cheddar, grated
  • 1/2 Granny Smith apple
  • 1 large Oregon Black Truffle
  1. Bring water, milk, bay leaf, salt and pepper to a boil in a heavy saucepan.
  2. Gradually whisk in the polenta. Reduce heat to medium and continue whisking. Once somewhat thickened, reduce heat to low and stir frequently with a wooden spoon until smooth, 30-40 minutes.
  3. Remove from heat. Remove the bay leaf. Add the butter and cheese. Stir until melted.
  4. Peel and grate the apple. Stir into the polenta.
  5. Serve into individual bowls topped with a thin slice of un-peeled apple and shaved truffle.
