Mushroom Salt

Rich, woodsy umami with many, many uses.

At a glance
  • 1 lb. fine sea salt
  • 1 oz. kombu
  • 1 oz. dried Shiitake
  • 1 oz. dried Porcini
  • 1 oz. dried Morel
  • 1 oz. dried Shaggy Parasol
  1. Cut the kombu into 1/2" pieces.
  2. Use a Blendtec or Vitamix blender for 60 seconds to powder the kombu.
  3. Add each of the next mushrooms in order, and blend each for 30 seconds.
  4. Blend until the powder will pass through a medium sieve.
  5. Mix the powder with the salt in a large stainless bowl.
  6. Seal tight in jars, and use in a large hole salt shaker.
Additional Tips

Many different mushrooms can be used. This combo is pretty rich and woodsy, with kombu for extra depth.

Blend and mix near your stove hood, or outdoors with a little breeze to clear the dust.
