Morel Cracker Crumb Fry

A classic Midwestern morel appetizer

  • 20 to 30 small morels
  • 1 egg, slightly beaten with 2 tablespoons cold water
  • 1/2 C. cracker crumbs
  • Salt and pepper to taste
  • 5 T. butter
  • 2 T. olive oil
  1. Roll the morels in the egg mixture.
  2. Put the cracker crumbs, salt, and pepper in a paper bag.
  3. Quickly shake the morels a few at a time in the bag.
  4. Melt the butter with the oil in a saute pan or skillet.
  5. Saute the morels until brown and crisp.
Additional Tips

Cook small amounts at a time so they can be served hot.
