- 2.5 C. Japanese rice
- 2.5 C. light dashi
- 4 oz. matsutake mushrooms, wiped, trimmed and sliced
- 1 aburaage (deep-fried tofu)
- 2 T. sake rice wine
- 2 T. soy sauce
- 2" square kombu
- Mitsuba for garnish (optional)
Methods/steps
- Put the rice in a bowl and wash it with cold water. Repeat washing until the water becomes clear. Drain the rice well in a strainer.
- Put rice and dashi in a rice cooker with the kombu on the bottom and set aside for 30 minutes.
- Shred matsutake mushroom lengthwise. Cut aburaage into thin strips.
- Add matsutake, abura-age, soy sauce, and sake in the rice cooker and cook the rice according to your rice cooker directions.
