Matsutake Gohan

  • 2.5 C. Japanese rice
  • 2.5 C. light dashi
  • 4 oz. matsutake mushrooms, wiped, trimmed and sliced
  • 1 aburaage (deep-fried tofu)
  • 2 T. sake rice wine
  • 2 T. soy sauce
  • 2" square kombu
  • Mitsuba for garnish (optional)
Methods/steps
  1. Put the rice in a bowl and wash it with cold water. Repeat washing until the water becomes clear. Drain the rice well in a strainer.
  2. Put rice and dashi in a rice cooker with the kombu on the bottom and set aside for 30 minutes.
  3. Shred matsutake mushroom lengthwise. Cut aburaage into thin strips.
  4. Add matsutake, abura-age, soy sauce, and sake in the rice cooker and cook the rice according to your rice cooker directions.
