Maitake, Shiitake & Asparagus Stir Fry

Light, fresh, and healthy.

  • 1 C. maitake, shredded
  • 6-8 dry chinese black mushrooms
  • 2 cloves garlic, minced
  • 1 T. ginger, minced
  • 1 T. extra virgin olive oil
  • 1 T. soy sauce
  • 1/2 cup water, including reserved maitake soaking water
  • 1 medium carrot, julienned
  1. Soak shiitake in warm water to cover, 20-30 minutes or until soft.
  2. Remove shiitake and squeeze dry, reserving 1/2 C. liquid.
  3. Remove stems and slice 1/8\" thick vertically.
  4. Heat up a skillet, saute the garlic, ginger, maitake and shiitake for 2 to 3 minutes.
  5. Add the soy sauce and reserved soaking liquid.
  6. Cover and simmer for 5 to 7 minutes.
  7. Add the asparagus and carrots.
  8. Cover and simmer another 5 minutes.
