Maitake, Shiitake & Asparagus Stir Fry

- 1 C. maitake, shredded
- 6-8 dry chinese black mushrooms
- 2 cloves garlic, minced
- 1 T. ginger, minced
- 1 T. extra virgin olive oil
- 1 T. soy sauce
- 1/2 cup water, including reserved maitake soaking water
- 1 medium carrot, julienned
Methods/steps
- Soak shiitake in warm water to cover, 20-30 minutes or until soft.
- Remove shiitake and squeeze dry, reserving 1/2 C. liquid.
- Remove stems and slice 1/8\" thick vertically.
- Heat up a skillet, saute the garlic, ginger, maitake and shiitake for 2 to 3 minutes.
- Add the soy sauce and reserved soaking liquid.
- Cover and simmer for 5 to 7 minutes.
- Add the asparagus and carrots.
- Cover and simmer another 5 minutes.
