- 12 oz. fresh pizza dough
- 3 T. extra virgin olive oil
- 1 lb. Lactarius, sliced
- 1 clove garlic
- 1 t. dried basil
- Salt & pepper to taste
- 12 oz. fresh mozarella, sliced thin
- 8 oz. Italian chicken sausage
- 1/4 C. rehydrated sun-dried tomatoes, chopped
- 1/4 C. fresh grated Parmesan
Methods/steps
- Saute Lactarius over medium high heat in 1 T. olive oil and a little salt until dry.
- Preheat oven to 450F, preferably with a pizza stone.
- Roll out dough to a very large pizza.
- Drizzle on the remaining 2 T. oil.
- Press the garlic onto the dough, then smear evenly around.
- Sprinkle the basil around, then salt & pepper.
- Evenly distribute the cheese, then dollops of sausage, then tomatoes and mushrooms.
- Top evenly with Parmesan.
- Bake 15-20 minutes or until nicely browned.
Additional Tips
Almost any firm, rich & earthy mushroom will work here.
Serve with a soft young red or a dry rose wine.
