Hen-of-the-woods on Bread

Vinegary, rich, and salty

At a glance
  • 2 c. hen-of-the-woods
  • 2 cloves garlic, chopped
  • 1/4 c. leeks, white part only, thinly chopped
  • 4 c. vegetable broth
  • 1/2 c. sweet hard cider
  • water
  • salt and pepper to taste
  1. Fry mushrooms in butter with garlic and leeks for 2 minutes.
  2. Add 4 cups of broth and bring to a boil. Add cider.
  3. On low heat, cook until most the moisture is gone, then add 2 cups of water. Boil down again.
  4. Serve one layer of mushrooms on a slice of bread as a side dish.
Additional Tips

A mild, low salt crusty bread is best.
