This is a pesto made using the Crocodile Agaricus: Agaricus crocodilinus along with the basil. The horse mushroom and giant horse mushroom have a similar flavor. Other mushrooms may be substituted, but the flavor will differ. To be served over pasta, with Parmesan cheese, if desired.
- 1/4 cup or more olive oil
- 1/4 cup minced onions
- 3 cups finely chopped Crocodile Agaricus
- 2 cloves garlic, minced
- 1 cup minced fresh basil
- 1/2 cup pine nuts
- 1/2 teaspoon salt
- Saute the onions and mushroom in the olive oil until they have softened, adding more oil if needed. Do not brown, or the flavor of the mushroom will become more coarse. Add the garlic, and saute until just fragrant. Add the basil, pine nuts and salt, and saute until warmed through. Serve over pasta with Parmesan cheese.
