Chanterelle, Sun-Dried Tomato & Brie Pizza

- 12 oz. fresh pizza dough
- 2 T. extra virgin olive oil
- 12 oz. fresh Brie (16 oz. shredded Fontina, Tallegio, goat cheese, etc)
- 2 T. chopped fresh herb (same as Roasted Chanterelle recipe)
- 2 C. Roasted Chanterelles
- 1/2 C. rehydrated sun-dried tomatoes, chopped
- 1/4 C. fresh grated Parmesan
Methods/steps
- Preheat oven to 450F, preferably with a pizza stone.
- Roll out dough to a very large pizza.
- Brush with oil.
- Dab evenly with small pieces of Brie or spread the grated grated cheese.
- Evenly spread herbs, then chanterelles, tomatoes, and Parmesan.
- Bake 15-20 minutes or until nicely browned.
