Chanterelle, Sun-Dried Tomato & Brie Pizza

Richly earthy & summery

  • 12 oz. fresh pizza dough
  • 2 T. extra virgin olive oil
  • 12 oz. fresh Brie (16 oz. shredded Fontina, Tallegio, goat cheese, etc)
  • 2 T. chopped fresh herb (same as Roasted Chanterelle recipe)
  • 2 C. Roasted Chanterelles
  • 1/2 C. rehydrated sun-dried tomatoes, chopped
  • 1/4 C. fresh grated Parmesan
  1. Preheat oven to 450F, preferably with a pizza stone.
  2. Roll out dough to a very large pizza.
  3. Brush with oil.
  4. Dab evenly with small pieces of Brie or spread the grated grated cheese.
  5. Evenly spread herbs, then chanterelles, tomatoes, and Parmesan.
  6. Bake 15-20 minutes or until nicely browned.
