Ants on Beanstalks

- 6 bundles bean thread noodles
- 2 q. warm water
- 4 T. peanut oil
- 2 cloves garlic, partially smashed
- 1 thumb fresh ginger root, partially smashed
- 1 C. maitake, chopped into "ant" sized shreds
- 1/2 C. sake
- 1/2 C. chicken or vegetable stock
- 1 T. fish or soy sauce
- 2 T. hoisin sauce
- 1 habanero (scotch bonnet) pepper, minced
- 3 scallions, green part only, sliced into fine rings
Methods/steps
- Soak the bean thread noodles in warm water for 15 minutes. Drain thoroughly and set aside.
- Heat oil in a hot wok. Add garlic and ginger, stir-fry for 30 seconds, and remove.
- Add the maitake and stir-fry another 30 seconds.
- Add the sake, stock, soy sauce, hoisin, and pepper. Simmer together 10 minutes or until sauce thickens.
- Add the noodles, and toss together.
- Remove to a serving bowl and top with green onions.
Additional Tips
If a whole habanero is too much, slit a whole pepper several times and add to the simmering liquid. Or use a lesser amount of red Thai chile(s).
